Jungle Maqluba
INGRIDIENS
- 1 kg of rice,
- 6 glasses of water,
- half a glass of plant oil of any kind,
- Maggi seasoning sauce,
- cumin or curry.
PREPARATION
Mix all ingredients and cook for 20 minutes.
‘Calais Jungle’ was an illegal and uncivilized migrant encampment in the North-Eastern part of the French city of Calais on the southern part of Channel Tunnel. During the migration crisis in Europe in 2015 between 7 and 9 thousand people were encamped there. The camp was set up by the migrants themselves. Even though it was meant as a stop-over on the way to Great Britain, migrants lived there for years. It soon became a micro-city with streets, country districts, restaurants, shower appliances, shops, a school, a church, a library and a mosque. In 2016 ‘the city’ was razed to the ground, but soon migrants returned to the place. ‘Calais Jungle’ became a French symbol of the European migration crisis.
Maqluba is one of four traditional Palestinian dishes. It means ‘upside down.’ This recipe was brought by young Palestinians, Calais Jungle dwellers.
